In questo mio lavoro ho cercato di evidenziare il ruolo primario e al contempo duplice della nutrizione, come emerge dai disordini del sistema immunitario, sul cui funzionamento ancora molto aperte ed esigue sono le parole della scienza ortodossa.

Duplice perché una cattiva nutrizione può essere alla base di questi squilibri e delle patologie che ne derivano mentre, al contrario, una buona nutrizione può porsi come strumento efficace, non solo nella prevenzione ma anche nella cura e nel trattamento, nella fattispecie, di queste particolari patologie, prendendo a modello la Poliartrite reumatoide, malattia di origine autoimmune.

L’idea centrale che sta alla base di tutto il mio lavoro riflette la mia concezione di alimentazione come prevenzione e terapia, che ho maturato sia lungo il mio percorso esistenziale attraverso letture ed esperienze personali, sia attraverso lo studio delle discipline naturopatiche in questi anni di frequenza a questa scuola di naturopatia, discipline fra le quali la nutrizione ha, giustamente, un ruolo centrale. Questa centralità dell’alimentazione nella salute umana (e non solo) è però, a mio avviso, tuttora non sufficientemente compresa sia dalle persone comuni, sia dai medici di base in generale (i quali hanno uno stretto contatto con la popolazione e perciò un importante ruolo nella trasmissione di corrette informazioni nutrizionali al paziente) come pure dalla scienza ortodossa, la cui voce continua ad essere identificata dai più come l’unica e corretta lettura dei fenomeni e fonte di verità assolute.

Alla luce di una visione naturopatica di salute come equilibrio fra i sistemi e le “energie” che regolano il funzionamento del nostro organismo e, in senso più globale, del nostro essere, e di alimentazione come somministrazione di “molecole buone”, in grado di fornire al nostro organismo una materia prima sana e utile allo svolgimento corretto dei molti e complessi processi che si svolgono al suo interno, guidata ed ispirata in particolare dalla linea di pensiero di un importante medico e ricercatore “dissidente” (Jean Seignalet), nella cui opera ho trovato una grande corrispondenza con la mia concezione di fondo della nutrizione, in questo mio lavoro ho voluto portare avanti da un lato l’idea che alla base di molti squilibri, nella fattispecie del sistema immunitario, vi sia una cattiva alimentazione (in causa, in tal senso, è l’alimentazione moderna e industrializzata, povera di vitamine e minerali e ricca di sostanze pericolose) e dall’altro come un’alimentazione veramente sana e che dunque si rifaccia alle origini, possa costituire un valido strumento non solo di prevenzione ma anche di cura nel trattamento delle patologie legate ai disordini del sistema immunitario, malattie sempre più diffuse e la cui eziologia resta tuttora sconosciuta, quali la Poliartrite reumatoide.

La tesi prende avvio da un’analisi dei cambiamenti dell’alimentazione dall’antichità ad oggi i quali, secondo alcuni studiosi, sono alla base del progressivo deterioramento ed indebolimento dell’organismo che porta all’insorgenza della malattia (non soltanto di origine autoimmune).

Il capitolo “Alimentazione e Immunità” introduce la problematica del cibo, complessa matrice composta di un numero vastissimo di elementi (spesso anche molto pericolosi), e degli effetti che tali componenti mostrano di avere sul sistema immunitario. Viene qui ribadita l’importanza della componente ambientale ed il ruolo del cibo quale via privilegiata di contatto fra organismo e ambiente. In particolare vengono in questo contesto brevemente esaminati alcuni nutrienti (vitamine, microelementi, acidi grassi polinsaturi) la cui presenza nell’alimentazione appare rilevante ai fini del corretto funzionamento del sistema immunitario, con molte evidenze scientifiche.

Segue il capitolo dedicato alla descrizione, breve ma sufficientemente dettagliata, del sistema immunitario, dei sue componenti, del suo funzionamento e del meccanismo dell’autoimmunità, capitolo che include un sottocapitolo dedicato all’infiammazione e al suo ruolo fondamentale nello scatenamento dei vari disordini immunitari.

Il passaggio successivo entra nel dettaglio della descrizione della Poliartrite reumatoide e della teoria sulla sua patogenesi.

L’ultimo capitolo tratta espressamente dell’alimentazione nel trattamento della PR, e presenta il contributo di Jean Seignalet nel trattamento di questa patologia, come risulta dalla dieta originaria o ancestrale, a mio giudizio molto interessante ancorché poco nota e che meriterebbe di essere più attentamente studiata e applicata, visti i successi ottenuti non solo nell’ambito di questa patologia.

La tesi si chiude con un breve excursus sulle conferme scientifiche dell’importanza dell’alimentazione nel trattamento della PR e delle altre patologie che coinvolgono il sistema immunitario.
